Oreo Cheesecake Brownies

Oreo Cheesecake Brownies
Makes 16 squares

Brownie Layer
  • 3/4 cup plain flour
  • 2/3 cup caster sugar
  • 1/2 cup cocoa powder
  • 125g unsalted butter chopped
  • 3 eggs
  • 1 teaspoon vanilla essence
Cheesecake Layer
  • 500g cream cheese at room temperature
  • 1 pack Oreos roughly chopped
  • 3/4 cup caster sugar
  • 1/2 cup Cadbury milk choc melts
  • 2 teaspoons vanilla essence
  • 2 eggs

1. Preheat oven to 160°c (140°c fanforced).
2. Melt butter in a saucepan over a medium heat and then remove from heat. Whisk in eggs vigorously one at a time then stir in flour, vanilla essence, sugar and cocoa powder. Pour batter into a lined 20cm square cake tin. Put aside.
3. Beat cream cheese, sugar and vanilla essence until smooth. Beat in eggs one at a time. Carefully pour mixture on top of brownie layer. Top with chopped Oreos and press down gently. Bake in oven for 35 minutes. Allow to cool completely on bench before wrapping and allowing to set in the fridge for at least 4 hours (preferably overnight).
4. Once set, melt choc melts in microwave for short bursts until melted. Pour into a zip lock bag and make a small cut in one corner. Drizzle chocolate over the top of the Oreos. Allow to set and cut into squares. Serve.
