Lamb Kofta Wraps

Delicious lamb kofta in a pita wrap with salad. The koftas are also good with rice and veg on the side.

Lamb Kofta Wraps
Serves 6

  • 1kg lamb mince
  • 6 pita bread wraps or wraps of choice
  • 2 cups shredded iceberg lettuce
  • 4 tomatoes sliced into half moons
  • 1/2 cup sliced red onion
  • 1 brown onion finely diced
  • 1/2 cup bread crumbs
  • 1 egg
  • 2 teaspoons ground cumin
  • 2 teaspoons ground coriander
  • 2 teaspoons garlic powder
  • 1 teaspoon cinnamon
  • Zest of one lemon
  • 1 tablespoon chopped fresh parsley
  • Salt and pepper for seasoning
  • 12 bamboo skewers

  • 1 cup plain Greek yoghurt
  • Juice of 1 lemon
  • 1 tablespoon chopped fresh mint
  • 1/4 teaspoon garlic powder
  • Salt and pepper for seasoning

1. In a mixing bowl combine mince meat, herbs and spices, onion, breadcrumbs, egg and zest. Season with salt and pepper. Shape mince into 12 equal sized sausages and place onto bamboo skewers. Wrap and allow to firm up in fridge for 30 minutes.
2. To make the tzatziki combine all the ingredients and allow to sit in the fridge.
3. Heat a small amount of olive oil over a medium high heat and fry koftas for approx 4 minutes each side. Put aside.
4. Layer lettuce, 2 koftas, tomato, onion and tzatziki over a pita wrap. Serve.
