Slow Cooker Moroccan Beef Stew
Serves 8

  • 1.5kg casserole beef cubed
  • 3 carrots peeled and sliced
  • 4 celery ribs sliced
  • 1 brown onion sliced into half moons
  • 1 large sweet potato,
  • peeled and cut into chunks
  • 1 red capsicum sliced into strips
  • Juice of 2 lemons
  • 4 garlic cloves crushed
  • 1 tin chickpeas drained
  • 1 tin tomatoes
  • 1 tablespoon paprika
  • 3 teaspoons cumin
  • 2 teaspoons ground coriander
  • 3 teaspoons ground ginger
  • 3 teaspoons turmeric
  • 1 teaspoon ground cardamom
  • 1 teaspoon ground cinnamon
  • Salt and pepper for seasoning

1. Place all ingredients into slow cooker, season with salt and pepper and stir. Cook on low for 6-8 hours, depending on slow cooker.
2. Serve with couscous, rice, extra veg and naan bread.

Will last in fridge for upto 3 days. Freezes well.
