Slow Cooker Chicken & Chorizo Stew



Slow Cooker Chicken & Chorizo Stew
Serves 6-8


  • 4 large chicken breasts
  • 2 tins diced tomatoes
  • 1 tin chickpeas drained
  • 250g chorizo sliced
  • 3 tablespoons tomato paste
  • 1 red capsicum cubed
  • 1 green capsicum cubed
  • 1 brown onion chopped
  • 3 sprigs of thyme
  • 3 garlic cloves crushed
  • 2 teaspoons ground paprika
  • 2 teaspoons chopped fresh oregano
  • 1 teaspoon chicken stock powder
  • Salt and pepper for seasoning

1. Fry chorizo in some Olive oil for a few minutes to release flavours.
2. Add all ingredients to slow cooker and season with salt and pepper. Stir. Cook on low for 6-8 hours depending on slow cooker.
3. Shred chicken when cooked. Serve with rice, couscous or pasta.
