Thai Beef Salad


Thai Beef Salad
Serves 6

  • 800g steak of choice
  • 3 cups mixed salad greens
  • 1 red capsicum sliced
  • 1 medium cucumber sliced into half moons
  • 1 punnet cherry tomatoes halved
  • 1/2 cup red onion sliced
  • 3 tablespoons mint leaves
  • 3 tablespoons coriander leaves
  • Red chilli sliced for garnish (optional)
  • Vegetable oil
  • Salt and pepper for seasoning
Dressing
  • Juice of 2 limes
  • 2 tablespoons fish sauce
  • 1 tablespoon brown sugar
  • 2 teaspoons chopped red chili
  • 1 teaspoon minced garlic
  • 1 teaspoon chopped mint
  • 1 teaspoon chopped coriander
1. Combine salad ingredients (besides chili) and put aside.
2. Season steak with salt and pepper and fry or grill over a high heat in a little oil until cooked to your preference. Put aside and cover in foil until cooled slightly.
3. Combine dressing ingredients. Distribute salad amongst plates. Drizzle with a small amount of dressing. Thinly slice steak and distribute amongst salads. Drizzle with more dressing and garnish with chopped red chili. Serve.
