Beef Bourguignon

Beef Bourguignon
Serves 8

A rich and hearty beef casserole. The meat melts in your mouth and is full of so much flavour.

  • 1.5kg beef
  • 800g baby potatoes
  • 500g baby brown onions
  • 1 tin diced tomatoes
  • 150g bacon diced
  • 2 large carrots peeled and cut into chunks
  • 1 punnet button mushrooms
  • 1 1/2 cups dry red wine (pinot noir, shiraz)
  • 3 sprigs of thyme
  • 4 tablespoons tomato paste
  • 3 tablespoons plain flour
  • 3 teaspoons beef stock powder
  • 2 teaspoons garlic powder
  • Salt and pepper
  • Olive oil

1. Heat a small amount of oil in a frying pan
over medium high heat and fry bacon until crispy.
Place bacon in slow cooker. Dust beef
in plain flour and fry in batches until browned on all sides.
Place in slow cooker.
2. Add all other ingredients to slow cooker and
season with salt and pepper. Stir well
and place lid on. Cook on low for 6-8 hours,
depending on slow cooker.
3. Remove thyme sprigs before serving.
Serve with mash, pasta or crusty bread.
