One Pot Spaghetti Napolitana

An easy and delicious pasta dish all made in one pot. Budget friendly and perfect for meatless Mondays.

One Pot Spaghetti Napolitana
Serves 8

  • 500g spaghetti
  • 4 cups hot water
  • 2 400g tins cherry tomatoes
  • 1 brown onion diced
  • 2 tablepsoons fresh basil chopped
  • 4 garlic cloves crushed
  • 2 teaspoons veg stock powder
  • Olive oil
  • Salt and pepper

1. Heat a small amount of olive oil in a pot over medium high heat and saute onion for 5 minutes. Add garlic and saute for a further 2 minutes. Increase heat and pour in water, tinned tomatoes, basil, veg stock powder and season with salt and pepper.
2. Bring to a boil and add spaghetti. Stir. Allow to simmer for 15 minutes stirring every couple or minutes. Serve.
