Baked Mac & Cheese


Whether you serve this as a main or as a side, you can't go wrong with a classic mac & cheese! You could also add bacon or veg for extra flavour.

Baked Mac and Cheese
Serves 6 as a side

  • 250g macaroni elbows
  • 3 cups of low fat milk
  • 2 cups freshly grated tasty cheese
  • 2 cups freshly grated mozzarella cheese
  • 1/3 cup plain flour
  • 60g butter
  • 1 teaspoon light olive oil
  • 1 teaspoon garlic powder
  • 1/2 teaspoon mustard powder
  • Ground white pepper and salt for seasoning

Topping
  • 1 cup panko breadcrumbs
  • 1/3 cup grated parmesan
  • 25g butter melted

1. Preheat oven to 180°c (160°c fanforced). Boil macaroni 1 minute under packet instructions. Drain, stir through light olive oil and put aside.
2. In a saucepan melt butter over a medium heat. Add flour and cook for 2 minutes. Slowly stir in milk, whisking as you go to remove any lumps. Adjust heat accordingly. Once milk is added, add in garlic powder, mustard powder and season with salt and pepper. Allow to simmer gently for 5 minutes, stirring every so often. Add in grated cheeses and turn heat off once melted.
3. To make topping combine panko crumbs, melted butter and parmesan.
4. Mix macaroni through sauce. Pour into a baking dish and sprinkle with topping. Bake in oven for 20-25 minutes or until golden. Allow to sit for 5 minutes before serving.
