Pumpkin Soup


A hearty and comforting soup perfect for a cold Winter's night. It's also very affordable and easy to make, too.

Pumpkin Soup
Serves 6

  • 1.2kg butternut pumpkin cubed
  • 1 brown onion chopped
  • 2 garlic cloves crushed
  • 4 cups vegetable or chicken stock
  • 1/3 cup light thickened cream + extra for serving
  • 1/8 teaspoon ground nutmeg
  • Salt and pepper for seasoning
  • Olive oil

1. Heat a small amount of olive oil over a medium heat in a large pot. Saute onion for five minutes. Add garlic and nutmeg and fry until fragrant. Place pumpkin in pot and stir. Stir in stock and season with salt and pepper. Place lid on and allow to simmer for 30 minutes.
2. Allow to cool slightly before blending. Once blended, stir in 1/3 cream. Distribute amongst bowls and drizzle with extra cream (optional) and cracked black pepper. Serve with crusty bread.
